Amélie’s Homemade Salmon Skewers

Bonjour mon ami,

Homemade skewers are one of my favourite things to eat! I love the fact that my food is on a stick and my kids do too. They are great cooked on the bbq or in a pan. You can easily make a big batch and freeze some for another night, or cook them all and have as leftovers. 

Here is one of my all time favourite skewer combos:

Amélie’s Homemade Salmon Skewers

1 wild salmon fillet, cut into bite-sized pieces
1 fennel bulb, outer layers and core removed, cut into bite-sized pieces
1 courgette, peeled lengthways into ribbons
Sea salt and freshly ground pepper

Step 1: On a skewer alternate the bite size pieces of salmon fillet with the courgette ribbons and pieces of fennel.

Step 2: Season with sea salt and freshly ground pepper

Step 3: Pan-fry on the bbq or in a well-oiled pan until cooked to your liking

Alternative options if you have more time:
Option 1: Marinate the salmon in 1T of olive oil, paprika, lemon and salt and pepper for 30 minutes.
Option 2: In a bowl mix 2T of coconut yogurt, squeeze the juice of 1 lemon, coriander, salt and pepper and serve on the side as a dipping sauce.

Serve with a fresh salad and enjoy!
